Sunrise Skillet

Saturday mornings are meant for delicious, warm breakfasts. This simple skillet is all your favorite breakfast foods, deliciously combined into one. It also makes a great breakfast for when you’re camping, too!

  • 1/2 pound bacon
  • 4 cups frozen cubed hash browns (or peeled and diced potatoes)
  • 1/2 onion (diced)
  • 6 eggs (beaten)
  • 1 cup shredded cheddar cheese
  • 2 green onions (chopped)


  1. Cook bacon in a skillet on the stove over medium heat until slightly crispy, then remove and set aside for later.
  2. Add in hash browns and onion directly to the skillet (don't rinse out the bacon drippings). Cover and cook until potatoes are tender, about 10-12 minutes.
  3. Crumble bacon into potatoes, then add in beaten eggs and stir until they are fully cooked (about 2 minutes).
  4. Finish by sprinkling with cheese and chopped green onions and serve warm.

    • This is a skillet recipe where the ingredients are cooked on the stove top. Here are some other breakfast egg dishes that are baked in the oven or in the slow cooker.

    The first time I made this, I was a Camp Fire leader and my Camp Fire kids cooked this over an open fire on a camp out. It was called Wilderness Hash. It has always been a huge hit no matter where it is cooked. I can not find my original recipe so am very glad that you published this one. I don't think we used onions because kids can be picky. With or without, it is delicious and easy. Thank you.
