This recipe includes a homemade syrup recipe, and it is so delicious. It is so easy to make and has the most amazing flavor.

However, if you are looking for a syrup alternative, this recipe would taste absolutely amazing with a frosting glaze. We highly recommend using our recipe from our, Cream Cheese Glaze.

It is so easy to make, and pairs nicely with the sweet bread, and strawberries.

could i freeze this recipe, then thaw as needed?

For this recipe, we do not recommend freezing then thawing. Bread when soggy can freeze a little funny, as well as fruit, that when you bake it, there will be extra moisture, and your French Toast will be extremely soggy.

If you are wanting to make it ahead of time, I would say you would be fine to do so 24 hours in advance, but no more than that.

Strawberry Cream Cheese French Toast Bake

  • 12 slices white bread, cut into 1-inch cubes
  • 1 (8 ounce) package cream cheese, cut into small cubes
  • 2 cups sliced fresh strawberries
  • 2 cups half-and-half
  • 12 large eggs
  • 1/3 cup maple syrup
  • Syrup:
  • 1 cup sugar
  • 1 cup water
  • 2 Tablespoons cornstarch
  • 1 cup sliced strawberries
  • 1 Tablespoons butter


  1. Spray a 9x13-inch baking dish with nonstick cooking spray. Spread half the bread cubes in the prepared baking dish. Top with cream cheese cubes and strawberries. Layer remaining bread cubes over the strawberry layer.
  2. In a blender, mix together half-and-half and eggs until fully incorporated. Add maple syrup and blend until smooth. Pour mixture over bread mixture.
  3. Cover the baking dish with foil and refrigerate for 8 hours or overnight.
  4. Remove baking dish 30 minutes before baking. Preheat oven to 350 degrees F and bake the covered casserole for 30 minutes. Remove foil and continue baking for an additional 30 minutes.
  5. To make the syrup, whisk together sugar, water and cornstarch in a small saucepan. Cook over medium heat until mixture has thickened, about 5 minutes. Mix strawberries into the sugar mixture and cook over medium heat until strawberries are softened, about 10 minutes. Add butter and stir until butter is melted.

    Hi there! I love your blog & recipes... so THANK YOU for all that you do! Since it is SUMMER and it is HOT out, I hate to turn on the oven. That said, what do you think about setting this up in the crock pot and using a timer to kick on overnight for it to cook?? Any ideas or suggestions on crock pot cooking this scrumptious breakfast??
    • Hi Chris, we have not made the French Toast Bake in a slow cooker. I think it could possibly work, but the concern we have is that it only cooks for about 1 hour and if you let it set out overnight until the crockpot kicks on, the eggs, half and half, and cream cheese would be at room temp all night. The low setting on a slow cooker is around 200 and the high setting is around 300 degrees. (All slow cooker brands vary) So even cooking it on low all night would be too long. Let us know if you give this a try in the slow cooker. Best of luck to you and thanks so much for stopping by our blog!

        Great point! Don't laugh, but, I am still thinking 'really cold' nights... You are right, i don't want to leave that out all night long. My concern was for the last 1/2 hr of cooking without the top over it and how the oven would take care of crisping it up - where the crock pot can't. I baked muffins and a coffee cake for an hour this morning, so after seeing the recipe I was thinking if i could get around using the oven, I'd try to. I don't think I will compromise the end result... so I am BAGGING the idea, for this recipe! :)

    I am wondering if this recipe could be frozen before baking. It would be a great gift, maybe with directions to thaw in frig overnight and how to bake?? I know someone who could use some comfort meals during a very difficult time.

    I saw so many recipes in Family Circle, but don't know if you can help find a bread pudding recipe for brunch at Thanksgiving holiday. This recipe is almost the one, but I remember it also had chocolate and rum too, although I don't remember cream cheese? It would help, and I would be greatful.
