Stir-Fried Potatoes and Peppers Recipe

These Stir Fried Potatoes and Peppers are so easy to make and taste amazing. If you are looking for a quick and simple dinner idea or side dish, we highly recommend trying this one.

Shortly after I was married, my husband quickly learned the truth about me- I didn’t know how to cook.

I was super busy- I was working full time and going to school full time (which included student teaching at an elementary school) and since I had been living on my own for a couple of years, I was totally content with cereal for breakfast, lunch, and dinner. He, on the other hand, was not.

My husband was also going to school full time and working full time, but he still made time to make us dinner each night (we all have our own priorities).

Since we were on a college-student budget, he got pretty creative with our food. I came home one night to the smell of these potatoes cooking (frying?) on the stove and they have been a staple in our meal rotation ever since.

They really are the perfect side dish that can be thrown together in a matter of minutes.

This dish is delicious as is, however, I like to add a little ranch seasoning mix to give it just a little extra flavor. It is so yummy with a little kick of ranch seasoning mix.

what meat could i add to this recipe?

If you are looking to make this into a main dish, and a little more hearty, we recommend adding in some meat. Here are a few that would taste delicious with this recipe:

  • shredded chicken
  • grilled chicken
  • ground chicken
  • ground turkey
  • ground beef
  • steak
  • ham (you could used sliced or cubed)

would any potato work for this recipe?

For this recipe, we used russet potatoes, however, really any potato would work for this recipe. I have never made it using sweet potatoes because I usually use russet potatoes.

I have made this recipe using baby red potatoes and it was absolutely scrumptious. You can also peel the potatoes, or keep the skin on. I like the texture of the skin, so I usually keep it on.

You could also use golden yukon potatoes.

Stir-Fried Potatoes and Peppers Recipe

Ingredients

  • 6-8 medium potatoes, thinly sliced
  • 1 medium onion, sliced
  • 1 medium green bell pepper, sliced
  • 3 tablespoons olive oil (add more if needed)
  • salt and pepper to taste
  • seasoning salt to taste
  • water (as needed)

Instructions

  1. Place large skillet on stove-top, pour in olive oil, let oil warm up over medium high heat. Add the sliced potatoes and let them cook for a couple of minutes (7-8 minutes), stirring occasionally so that they don't burn. As the potatoes start to get tender, add peppers and onions. Lower the heat to medium, top with salt, pepper, and seasoning salt (plus any other spices you like- sometimes I like to throw a little Parmesan cheese on there) and place lid on top of the skillet. Stir every couple of minutes to keep from burning (if you need to add liquid, add water 1-2 tablespoons at a time). Continue to cook for 10-15 minutes (or longer if your potatoes are sliced thick), until potatoes, peppers, and onions are all soft and tender. Add more salt and pepper if needed.
