how to make Starbucks Copycat Lemon Pound Cake

You’ll need 2 9 x 5 inch loaf pans because this amazing recipes makes 2 loaves.

  1. Preheat oven to 350 degrees.
  2. Grease and flour 2 loaf pans.
  3. Combine the lemon cake mix, pudding mix, sour cream, vegetable oil, eggs, water, and lemon juice on medium speed.
  4. Pour the batter into the prepared pans.
  5. Bake for 45-50 minutes or until a toothpick inserted comes out clean.
  6. Let the loaf cool in the pan for about 30 minutes.
  7. Then remove from pan to cool completely.
  8. For the glaze mix together the powdered sugar and lemon juice and drizzle over each loaf.
  9. Slice and serve.

Starbucks famous Lemon Pound Cake can be made right at home with this easy and delicious recipe!

Ingredients

    Cake:
  • 1 (15.25 ounce) package lemon cake mix (I used Duncan Hines brand)
  • 1 (3.4 ounce) box instant lemon pudding mix
  • 1 cup sour cream
  • 1/3 cup vegetable oil
  • 4 eggs
  • 1/2 cup water
  • 2 Tablespoons lemon juice
  • Lemon Glaze:
  • 1 cup powdered sugar
  • 3-4 Tablespoons lemon juice (add more or less, depending on how thick or thin you like your glaze)

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease and flour 2 9 x 5 inch loaf pans.
  3. Combine all cake ingredients in a large bowl and beat on medium speed with an electric mixer for 1-2 minutes.
  4. Pour half of the batter into each of the prepared pans.
  5. Bake for 45-50 minutes, or until a toothpick stuck in the center of the loaf comes out clean. Let cool in loaf pan for about 30 minutes, then remove from pan and let cool completely.
  6. Mix together glaze ingredients and drizzle over the top of the cake.
  7. Cut into pieces and serve.

Notes

We like to use fresh lemon juice in this recipe. But bottled lemon juice works great too.
