Skinny Pumpkin Parfaits

Back to School gets me so excited for Fall! I had to celebrate and make a pumpkin snack for after school! These Skinny Pumpkin Parfaits taste delicious and you can make them in a matter of minutes! Enjoy!

  • 1 cup fat-free cottage cheese
  • 1/2 cup pumpkin puree
  • 1/4 cup of skim milk
  • 2 Tablespoons of instant vanilla dry pudding mix
  • 1 teaspoon of pumpkin pie spice
  • 1 teaspoon of cinnamon
  • 8 oz light whip cream (optional)
  • 16 Mini Wafer Cookies(optional)


  1. Place cottage cheese, pumpkin, milk, pudding, pumpkin spice, and cinnamon in a blender, and blend until smooth.
  2. Scoop into 4 small bowls and serve or cover and place in the refrigerator until chilled ? at least one hour.
  3. Top with light whip cream and cookies.

  1. I love it! I made some iced pumpkin cookies last night with my 3 year old daughter from, but still have 1/2 cup of pumpkin puree left, I can't wait to make these this weekend! Thanks for such great recipes!
