Skinny Chicken Salad Sandwiches

This skinny chicken salad was so easy to make and was completely guilt-free! It tastes great on it's own or own in a sandwich and is quick to put together.

Whenever I am trying to eat healthier, I always have the hardest time finding something to eat for lunch.  This chicken salad was so easy to make and was completely guilt-free!

Chicken Salad Sandwich Mix-Ins:

We’ve included our favorite simple Chicken Salad Sandwich mix-ins in this version of the recipe, but you can definitely make it your own!

Here are a few additional ingredients we’ve experimented with over the last few years!

Our Recipe:

  • 1/2 cup diced celery
  • 1/2 cup red grapes, halved
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans

Optional Ingredients:

  • Chopped red onions
  • Diced apples
    Chopped carrots
  • Chopped cashews
  • Diced jalapeños
  • Lime zest

Chicken Salad Substitutes:


Don’t like chicken? Don’t worry! Here are some substitutes for chicken in this recipe. Amounts can be adjusted based off of serving size for your family.

  1. Hard boiled eggs chopped
  2. 2 cans of tuna, drained
  3. Leftover turkey from another meal, this works perfect after Thanksgiving!

Keeping your Chicken Salad “skinny”:

So what makes this lunch healthier than a regular lunch? A lot of things! Here are a few things we did to keep this meal light.

Lean Chicken:
Using lean, shredded chicken can add a lot of protein to your sandwich! We like to throw a few chicken breasts in our slow cooker, or use a rotisserie chicken to save time.

To shred my chicken, I love using my KitchenAid Mixer! You can see which one I use HERE.

Sandwich Thins:
Choosing the right kind of bread can make or break the calories in this sandwich! We’d recommend sticking with breads that list “Whole Wheat Flour” as the first ingredient.

Wheat bread works great! But we also love these Sandwich Thins. With only 140 calories per bun, they are a great option for your sandwiches!

Greek Yogurt: 
Greek yogurt is a low calorie, high protein substitute for the traditional mayonnaise in Chicken Salad. Don’t be nervous about using yogurt, it gives it a delicious and tangy flavor.

Skinny Chicken Salad Sandwiches

Ingredients

  • 2 cups cooked, shredded chicken
  • 1/2 cup diced celery
  • 1/2 cup red grapes, halved
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/2 cup plain greek yogurt
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 8 slices of bread or 4 sandwich thins
  • 4 lettuce leaves

Instructions

  1. In a large mixing bowl, combine chicken, celery, grapes, cranberries and pecans.
  2. Fold in greek yogurt and lemon juice.
  3. Add garlic powder and salt and pepper, to taste. Mix until well combined.
  4. Spread chicken salad onto bread or a sandwich thin.
  5. Top with salad and another slice of bread or half of a sandwich thin.
