Skillet Strawberry Crumble

Fresh strawberries are my favorite part of summer! We’ve got a garden full of them and I’ve been searching for a way to use them up. Top this with some vanilla ice cream and you will LOVE your life!

  • 3 cups chopped strawberries
  • 1/2 cup sugar
  • 2 Tablespoons lemon juice
  • 1 Tablespoon cornstarch
  • Crumble:
  • 2 cups old fashioned oats
  • 1 cup brown sugar
  • 1/2 cup melted butter


  1. Heat cast iron skillet over medium heat.
  2. Combine strawberries, lemon juice, sugar, and cornstarch in skillet and cook until strawberries are softened and liquid thickens (about 5-7 minutes)
  3. In a separate bowl, combine oats, sugar, and butter.
  4. Sprinkle crumble over strawberry mixture.
  5. Bake for 10 minutes.
  6. Top with ice cream and enjoy! Best served warm.
