Sheet Pan Steak Fajitas

I could eat Mexican food for dinner every single night!  My husband, however, is not a fan!  He told me recently that he has never loved fajitas so I set out to prove him wrong.  This recipe is so simple and I love that it is made in a sheet pan.  Quick, easy and delicious!  And for the record, my husband approved. 😉

  • 1-2 pound flank steak, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 2 Tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 8-10 corn tortillas
  • Cilantro, for topping
  • Sour cream, for topping
  • Shredded cheddar cheese, for topping


  1. Preheat oven to 400 degrees F.
  2. Spread sliced steak, bell peppers and onion onto a large baking sheet.
  3. Drizzle olive oil on top and toss to coat evenly.
  4. In a small bowl, combine chili powder, cumin, garlic powder and paprika.
  5. Sprinkle seasoning mix over meat and vegetables and toss to coat evenly.
  6. Season with salt and pepper, to taste.
  7. Cook for 15-20 minutes, or until meat has reached desired doneness and vegetables are soft.
  8. Serve on tortillas and top with fresh cilantro, sour cream and shredded cheddar cheese, if desired.
