Salmon Salad with Lemon Avocado Dressing

With our Six Sisters’ Strong 90 Day Challenge we’ve been trying to eat a little healthier! I’ve been eating so many spinach salads for lunch that I just couldn’t take it anymore! I decided to throw together a few of my favorite foods and have now found my new favorite healthy lunch. Topped with this delicious and super easy Lemon Avocado Dressing, this salad is sure to give you all the energy you’ll need to get through the rest of the day!

Salmon Salad with Lemon Avocado Dressing

Super light and delicious Salmon Salad with Avocado Dressing is a delicious healthy option for your lunch!

  • 3 ounces cooked salmon
  • 2 1/2 cups of Romaine Lettuce
  • 6 cherry tomatoes
  • Croutons
  • Top with Parmesan Cheese
  • Dressing:
  • 1 Avocado
  • 1/8 cup Extra Virgin Olive Oil
  • 1 Tablespoon Lemon Juice (freshly squeezed tastes best)
  • 1-2 Tablespoons water to get desired consistency


  1. Half the cherry tomatoes and add in a bowl with the rest of the salad ingredients.
  2. Place all of the ingredients for the dressing in a blender, blend until all combined and avocados completely blended.
  3. If consistency is too thick, continue adding water until desire consistency is reached.
  4. Drizzle over salad, top with croutons and sprinkle with Parmesan cheese. Enjoy!
