We crave pumpkin flavored everything in the Fall. These Pumpkin Spice Almonds are roasted in your in oven and coated with delicious sugars, spices, and vanilla.

As soon as the weather starts cooling down I’m ready for sweaters, pumpkin flavored everything, and Halloween. I buy all the fall scented candles and probably go a little bit overboard. But if it smells like fall, it feels like fall! Even if the weather is still warm.

We’re headed to an event this weekend to promote our brand new cookbook, Copycat Cooking, and I figured it would be a good idea to bring a little sample for anyone who came to see us!

How to Roast Almonds in the Oven

If you’ve been to a fair, the circus, or even a farmers market, you’ve probably had the chance to sample and smell the delicious fresh roasted almonds being sold.

As delicious as they are, those almonds can break the bank! So why not make them at home? It can’t be that complicated right? Well you’ll be surprised at just how NOT complicated these perfectly roasted pumpkin spice almonds turned out.

Here’s how it’s done!

  1. Start with raw almonds. You can find these in the bulk foods section of your grocery store. It’s important not to get salted or already roasted almonds, and to make sure they are raw.
  2. Whisk together your egg white, vanilla, and a splash of water to make a tasty coating for your almonds. You’ll want to whisk this until it begins to get frothy. It doesn’t take long with just a regular hand whisk, or you can use a hand mixer.
  3. Pour your almonds in the egg white mixture and toss until evenly coated. We found this to be easiest in a large mixing bowl.
  4. To a large ziploc bag, add your dry ingredients and mix gently to combine them all within the bag.
  5. Dump your almonds in the ziploc bag, zip it shut, and shake to coat your almonds. You should not have a lot of extra sugar in the bag, so keep shaking until totally coated.
  6. Roast your almonds at 250 degrees Fahrenheit for one hour, tossing every 20 minutes to avoid sticking together. This was easiest on a foil lined, greased baking sheet.

How to Store Oven Roasted Almonds

If these somehow make it through the first day of being made, they can be easily stored in an airtight container for up to 30 days in a cool place.

Ingredients

  • 1 1/2 pounds raw almonds
  • 1 egg white
  • 1 teaspoon vanilla
  • 1 Tablespoon water
  • 3/4 cup brown sugar
  • 1/3 cup white sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ginger

Instructions

  1. Preheat oven to 250 degrees.
  2. Line a baking sheet with foil and spray with non-stick cooking spray. Set aside.
  3. Whisk together your egg white, vanilla, and water.
  4. Whisk until it begins to get frothy. It doesn't take long with just a regular hand whisk, or you can use a hand mixer.
  5. Pour your almonds in the egg white mixture and toss until evenly coated. We found this to be easiest in a large mixing bowl.
