Our zucchini plants are out of control. We eat zucchini with at least 2 of our meals each day. I have had to get really creative with how I use it.
My mother-in-law used to make this for my husband when he was growing up and he requested that I make it. It was a huge hit. Who would have thought that a veggie would make a moist and delicious cake.

how do you know when a zucchini is perfectly ripe?
I am usually not very good at growing plants or my garden (definitely don’t have a green thumb), so when my zucchini took off this year, you can imagine my excitement. I finally found a plant that is easy and useful.
However, I quickly became intimidated when I didn’t know if it was ripe enough to pick, or not.
Here is how to determine if a zucchini is perfectly ripe, and ready to pick:
Stick to the “Pick early, Pick often” rule, so you can continue to grow more. Even off the plant, they can still mature and ripen.
Zucchini, when ripened and ready to pick, should be a dark green color and hard to the touch. If it is mushy, it is most likely starting to rot, and we recommend not using it.
To break the zucchini off, hold the thicker end of the zucchini (farthest from the leaves and root of the plant), and gently twist the zucchini, until it pops off. Do not yank it off, or it will damage the plant, and could even lift the roots. A simple twist of the zucchini will do the trick.

1/2 cup chopped walnuts (optional- I didn't use any)
6 tablespoons unsweetened cocoa powder
1/4 cup margarine
2 cups confectioners' sugar
1/4 cup milk
1/2 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan.
Bake for 25 to 30 minutes in the preheated oven, until cake springs back when gently touched. To make the frosting, melt together the 6 tablespoons of cocoa and margarine; set aside to cool. In a medium bowl, blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over cooled cake before cutting.
