Growing up, we usually had a “salad” like this as a side dish for Sunday dinner, but this would also be a delicious dessert.

Or, in a perfect world, eat it for both. That’s what we usually do. It is so easy to make and has the most amazing flavor, why not just eat it as the main dish too?

This dish can be thrown together in a matter of minutes, which is my favorite kind of recipe.

It only requires a few simple ingredients, that are inexpensive, so it won’t break your bank. Every time I bring this recipe to a family party, it is always the first thing gone.

This recipe is definitely a crowd favorite, whether you serve it as a side dish, or dessert.

If you are looking to make this recipe a little lighter, we have a few recommendations for you. However, these changes will switch up the texture a little, as well as the flavor.

Here is what we recommend, to lighten this dish up:

  • Replace half the whipped cream with plain Greek yogurt, or even vanilla Greek yogurt with less sugar than original vanilla yogurt. You could also use a fruity yogurt, but for the cheesecake taste, we recommend using the vanilla.
  • Use sugar free mixes, such as the pudding mix.
  • Add fat free cottage cheese with the whipped cream for added texture and protein.

Ingredients

  • 1 1/2 boxes (3.4 oz each) packages cheesecake instant pudding mixes
  • 1 (32 oz) container vanilla yogurt
  • 1 (8 oz) container Cool Whip (thawed)
  • 1 (10 oz) package frozen raspberries, slightly thawed

Instructions

  1. In a large bowl, mix together pudding mixes, yogurt, and Cool Whip (you'll have to really beat it to get out all the lumps!).
  2. Fold in the berries (the more that you stir them in, the more that they will turn your salad pink).
  3. Cover and chill until serving time.
