Pumpkin Cupcakes with Cream Cheese Frosting Recipe

I know it isn’t October yet, but I couldn’t help myself from breaking out the pumpkin and whipping up a delicious treat!  These Pumpkin Cupcakes are so easy to make and the fluffy cream cheese frosting doesn’t hurt either. 😉

  • Cupcakes:
  • 1 package spice cake mix
  • 1 (15 ounce) can pure pumpkin
  • 1/3 cup water
  • 1/3 cup vegetable oil
  • 3 eggs
  • Frosting:
  • 1 (8 ounce) package cream cheese, softened to room temperature
  • 1/4 cup butter
  • 2 teaspoons vanilla extract
  • 2 Tablespoons sour cream
  • 6 cups powdered sugar


  1. Cupcakes:
  2. Preheat oven to 350 degrees F and line a muffin tins with paper liners.
  3. Mix together cake mix, pumpkin, water, oil and eggs until well combined.
  4. Pour batter into prepared cups, filling 2/3 full.
  5. Bake for 18-23 minutes or until an inserted toothpick comes out clean.
  6. Let cool completely.
  7. Frosting:
  8. In a large bowl, beat together cream cheese, butter, vanilla and sour cream until fluffy.
  9. Beat in powdered sugar until smooth.
