Pumpkin Cookies with Caramel Frosting Recipe

In case our list of delicious pumpkin recipes wasn’t enough for you, here is one more amazing recipe! This recipe was really easy to follow.  The cookies were so soft and fluffy!  The caramel frosting was simple and amazing!

  • 1 cup butter(softened)
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup pumpkin puree
  • 1 teaspoon baking soda
  • 1 Tablespoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
  • 2 cups flour
  • Frosting
  • 3 Tablespoons butter
  • 1/4 cup heavy cream
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1 cup powdered sugar


  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream together butter and sugars. Add eggs and vanilla and mix well. Stir in pumpkin.
  3. In a medium bowl, sift together the baking soda, cinnamon, cloves, nutmeg, ginger, salt and flour.
  4. Add to pumpkin mixture and mix well. 
  5. Drop by heaping tablespoons onto a lightly greased cookie sheet. Bake for 10-12 minutes.
  6. Frosting:
  7. In a medium saucepan, combine butter, cream, and brown sugar over medium heat. 
  8. Cook, stirring occasionally, until mixture just begins to boil; remove from heat and stir in vanilla. 
  9. Cool then stir in powdered sugar. 
  10. Spread frosting over cooled cookies.
