Puffy Strawberry Cream Cheese French Toast

So I have to be completely honest . . .
I am really not much of a breakfast person. I love a good bowl of cold cereal each morning.
Cinnamon Toast Crunch cereal is a weakness of mine (ha ha! I swear I’m not 5 years old).
However, I married a man who loves a hot breakfast.
His sweet mom used to wake up and make him pancakes and waffles before he left for school each morning.
When we were dating, my husband made this french toast for me . . .
I don’t know if it was the cream cheese in the middle, the strawberries on top, or the hot guy at the griddle, but I was HOOKED.
I would give up my bowl of cereal any day for this french toast!

Puffy Strawberry Cream Cheese French Toast

  • One loaf of thick bread (like Texas Toast style)
  • 4 eggs
  • 1/2 cup pancake mix (we use Bisquick)
  • 1 cup milk
  • Cinnamon
  • 1 tsp vanilla extract
  • 1 (8 oz) container strawberry cream cheese spread
  • Fresh strawberries
  • Powdered sugar


  1. Mix together the milk and pancake mix until smooth. Add eggs, mixing well after each addition. Add vanilla and sprinkle as much cinnamon in the mixture as you would like. Set mixture aside.
  2. Take two pieces of bread and thickly spread one piece of bread with cream cheese. Put other piece on top (basically making a cream cheese sandwich).
  3. Dip your "cream cheese sandwich" into the egg/milk/pancake mix. Flip over so that both sides are evenly coated.
  4. Place on a griddle that is preheated to about 375 degrees. Cook for 3-8 minutes on each side (depending on how brown you like your french toast).
  5. Top with fresh strawberries and powdered sugar (or maple syrup is good too!).
  6. Makes about 6-8 thick "sandwiches".
