Piña Colada Fruit Smoothie Recipe

This Pina Colada Fruit Smoothie is out of this world. It is by far the best smoothie I have ever tasted. You are going to love how easy this is to make, and how quick it comes together. The only thing missing is the beach.

HOW TO MAKE OUR PINA COLADA FRUIT SMOOTHIE

Step 1: Combine all ingredients (the pineapple juice, banana slices, pineapple sherbet, shredded coconut, coconut extract) in a blender until smooth.

You can use fresh or frozen banana. I have used both, and noticed it was a little thicker when my bananas were frozen.

It wasn’t a drastic difference, but I prefer mine fresh, as well as a little ripe.

The more ripe the bananas are, the sweeter they will taste in your smoothie.

Step 2: Pour into cups and serve immediately.

This doesn’t freeze very well, like any smoothie. We recommend serving right away. This isn’t a recipe I would make ahead.

don’t like coconut?

You don’t have to add the coconut if you don’t like it. I personally don’t like drinking the coconut shreds. I have never been one for unexpected textures when it comes to eating.

My husband loved that our pina coladas had fresh coconut shreds in them, so I added them for him, but you could most definitely do without them.

THE STORY BEHIND THE SMOOTHIE

A year and a half ago, my husband and I went on a trip to the Dominican Republic.  He served a mission for our church there for two years after his first year of college.

I wanted to go back and see all of the places he lived in and meet people he had taught.

It was absolutely gorgeous there. I am trying to convince him we need to go back and get out of this freezing Utah weather.

One of my favorite things about the trip were the unlimited piña coladas our resort would serve.

I was 8 months pregnant at the time, so anything to cool me down was much needed.  I drank so many of these, I couldn’t even keep track.

I was craving some so badly this week, that I decided to make my own.

  • 3 cups pineapple juice

  • 1/4 cup shredded coconut
  • 1/2 teaspoon coconut extract
