marinate your potatoes:
I love a good potato recipe, but sometimes they can get a little tiring when they all taste the same. These potatoes do not have that issue. They are incredibly easy to make and taste amazing.
If you are a pesto lover, you could also let your potatoes stay in the pesto mixture a little longer, to really give them that extra flavor. I will usually chop the potatoes a few hours in advance (usually in the morning) then place them in a ziplock bag with the pesto sauce, and put it in the fridge.
Then I add the cheese and let them bake.
It totally takes on the pesto flavor and tastes absolutely amazing.
would any potato work for this recipe?
For this recipe, we used russet potatoes, however, really any potato would work for this recipe. I have never made it using sweet potatoes, but I am sure it would be delicious.
I have made this recipe using mini red potatoes and it was absolutely scrumptious. You can also peel the potatoes, or keep the skin on. I like the texture of the skin, so I usually keep it on.
