Peanut Butter Chocolate Chip Cookie Bars Recipe

Now that I am officially outnumbered with three kids, I am all about convenience!  I love making cookie bars because they are just as easy to whip up as a batch of cookies but you just spread the dough in the pan and bake them, rather than baking a batch of cookies at a time.  I love anything chocolate and peanut butter and these bars were no exception!

  • 1 3/4 cup all-purpose flour
  • 1 1/4 cup packed light brown sugar
  • 1 cup creamy peanut butter
  • 1/2 cup butter, softened to room temperature
  • 3 Tablespoons milk
  • 1 large egg
  • 1 Tablespoon vanilla extract
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 2 cups milk chocolate chips


  1. Preheat oven to 375 degrees F. Spray a 9x13-inch baking dish with nonstick cooking spray.
  2. Mix flour, brown sugar, peanut butter, butter, milk, egg, vanilla, salt and baking soda together in a bowl until combined. Fold in chocolate chips.
  3. Spread into prepared baking dish and bake for 20 minutes, or until an inserted toothpick comes out clean.
