I have never been much of a meal prepper. I wish I was, but I barely have time to set food out on the table for my whole family, let alone, find time to make meals for the rest of the week, in one day.
But, I then came across this Overnight Chocolate Banana Oat recipe, made a few changes to how I like it, and then I suddenly became a meal prep person, after eating them.
They were so easy to throw together the night before. They only took a few minutes, so while kids were brushing their teeth and getting their backpacks ready for the next day, I made my oats.
You could probably prepare these in under 3 minutes. If you have all the ingredients, you will be good to go.
These Overnight Chocolate Banana Oats are a delicious and hearty breakfast, that will get you through the morning.
If you are like me, you don’t have much time to sit and enjoy a meal very often, but with breakfast pre-made, I get to sit, indulge, and live in the moment.
I’m telling you, you need these oats in your life.
how to make overnight chocolate banana oats
I’ll be honest. Overnight oats have always intimidated me. Then I got up the courage and made them, and I know my life was changed for the better. They are so easy. I promise you can do it.
Step 1: Smash bananas in large bowl.
It works best with bananas that are beginning to get a few brown dots on them. You definitely won’t want your bananas green for this recipe. You will want them to be a little sweeter, and more ripened.
Step 2: Add the peanut butter, milk, vanilla, cinnamon and salt. m=Mix until it is fully combined.
I just used a wooden spoon to mix them all together. It comes together fairly quickly. The peanut butter gets a little tricky because it sticks, but you could also use a fork, and it may mesh a little easier.
Step 3: Divide oats into three small mason jars. Store in refrigerator for at least 6 hours or overnight. We wouldn’t recommend making these a whole week in advance. Maybe 2-3 days at the most.
The bananas will also brown, so if it becomes a shade darker each day, it is the banana, but it is still safe to eat, and will still taste delicious.
Step 4: Top with more bananas and chocolate chips. We like to heat ours up in the microwave when we’re ready to eat.
I usually microwave mine for about 30-45 seconds. Depending on how you like yours, you may have to stir halfway through, then continue to microwave for a few more seconds.
