Breakfast is the most important meal of the day. It is also my favorite meal of the day. I love waking up, eating a big breakfast, and head off on my day. However, some breakfasts can leave you feeling slow and tired.

Especially if they are full of carbs and sugar. All things in moderation – that isn’t the best way to start your day.

I’ve been trying to eat a better breakfast and stay away from all the sugar cereal. It always helps when I make a large breakfast that will last me for a few days.

This One Pan Egg and Turkey Skillet is so easy to make and tastes delicious. I love to eat mine with avocados and topping it with salsa. My kids love to put Ketchup on theirs.

If you have busy mornings, this is your cure all. You can make this recipe ahead of time, and eat it throughout the week.

could i make this recipe, using ground beef?

You could definitely make this recipe, using ground beef. However, ground beef often has a little more fat to it, so we recommend rinsing and draining the beef a few times. I even rinse and drain my ground turkey.

One Pan Egg and Turkey Skillet

  • 1 pound lean ground turkey
  • 1 cup of salsa
  • 6 eggs
  • Salt and pepper, to taste


  1. Spray skillet with non stick spray and add in ground turkey.
  2. Cook over medium heat until turkey is browned. Drain any grease.
  3. Add in salsa and mix well. Cook turkey and salsa for 2-3 minutes.
  4. Crack in eggs and cover skillet for 7 to 9 minutes or until eggs are cooked to your liking. I cooked mine for the whole 9 minutes because I liked my yolks cooked all the way through.

  1. This was DELISH. We made for dinner tonight. I have a picky 5 yo dtr who eyeballs and vetoes most food groups, but does eat most things Mexican I seasoned the meat with onion powder, garlic powder, sun dried tomato bits, and lawrys chicken (and turkey) seasoning while I browned the meat and added a can of diced tomatoes (juice drained off) reduced the salsa ( for the picky eater) and added shredded cheese the last 2 1/2 minutes. We served dinner with corn tortillas, sour cream, avocados sliced and limes... Can't thank you enough .. A healthy dinner and something we will definitely make again...
  2. Made this last night for supper and it was a hit! I added some peppers and onions before cooking the turkey and added a little shredded cheese on top at the end. It was delicious! We usually do a weekly "breakfast for supper" day at our house and this recipe is definitely going to make the menu again! Thanks!

    I made this as a dinner meal. I would add another cup of salsa and serve it over rice to give it more dinnertime substance. The flavor is good, and really, it couldn't be any easier. Service with a salad and pickled beets. Simple and inexpensive
