Mini Corn Dog Muffins Recipe

My picky two-year-old has been going through a “ketchup phase.”  He doesn’t want to eat anything unless he can dip it in ketchup!  We were one of those families who had ketchup with just about anything.  Our husbands die when we ask our Mom to pull out the ketchup on Thanksgiving to eat with our turkey.  We can’t help it!  It just works! 😉 My toddler could eat hot dogs every day, if I let him, and this was one recipe he especially loved!  You could make these for a meal or have them as an appetizer or finger food for a party!

Mini Corn Dog Muffins Recipe

Homemade cornbread muffins filled with hot dogs to make one recipe even your kids will love!

  • 1/2 cup butter (melted)
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1 cup cornmeal
  • 1 cup flour
  • 1/2 teaspoon salt
  • 10 all-beef hot dogs


  1. Preheat oven to 375 degrees F.
  2. Combine butter and sugar in a large bowl, and whisk to combine.
  3. Add in the eggs and buttermilk and whisk until well combined.
  4. In a separate bowl, combine baking soda, cornmeal, flour, and salt, and stir to combine.
  5. Whisk dry ingredients into wet ingredients and stir well.
  6. Spray a mini muffin tin with nonstick spray, and spoon 1 Tablespoon of batter into each mini muffin cup.
  7. Cut hot dogs in to 1-inch pieces. Place one piece of hot dog into the middle of each cup.
  8. Bake for 8-12 minutes or until cornbread is golden brown.
  9. Cool in mini muffin tin for 5 minutes before serving.

  1. Epic fail at our house! My kids just ate the hotdogs out of the muffins and threw the cornbread on the floor. And putting them in muffin liners didn't work either, they just fall apart, (second batch without them worked much better except above mentioned problem).
    • We have only used a mini muffin tin when making these. You would definitely need to add more hot dogs and batter into each muffin spot. Your cooking time will increase slightly. Watch them closely so they don't overcook.
