These Mexican Tortilla Wrap Roll-Ups are a delicious and healthy appetizer, snack or lunch recipe, full of vegetables and flavor. You are going to love how easy these are to make, and how delicious they taste.

These little roll-ups are the perfect appetizer or even make a great lunch. You’ll be surprised at how easy they are to make.  They are a perfect appetizer for a party.
This is also a great recipe that will feed a crowd.
I love making these for game days, game nights, New Years Eve, birthday celebrations, Cinco De Mayo, or just for a quick and delicious lunch.
This is a great recipe for the kids to help out with. They will love rolling them up, and of course, sampling them.
You can also make them as hot or as mild as you like, depending on what seasoning you add.

how could i make these more healthy?

Although these are better than eating a candy bar, or something sugary, they aren’t necessarily a diet food.

If you are looking to make them more healthy, here is what we recommend:

-Replace the cream cheese: This is really what makes the roll ups stick together and give it a little liquid, however, you can also replace the cream cheese with Greek yogurt cream cheese, or 1/3 less fat cream cheese.

We also recommend using cottage cheese or Greek yogurt, instead of cream cheese. They will be a little more liquidy than cream cheese, so you will want to add a little less.

Use Whole Wheat Tortilla’s: Whole wheat tortillas are a great way to add a little fiber to your diet. They also have spinach or vegetable ones that would also work, and add a little more nutritional value to them.

-Add more vegetables: These do contain some good veggies, but you could always add more. We like adding chopped cucumber, sprouts, celery bits, radishes, or any other vegetables that would combine will with this recipe.

Mexican Tortilla Wrap Roll-Ups

These fun roll ups are great for a party or make the perfect lunch! They pack well in your kids lunch boxes.

Ingredients

  • 1 (8 ounce) cream cheese, softened to room temperature
  • 1 (16 ounce) container sour cream
  • 2 Tablespoons taco seasoning
  • 1 (16 ounce) can refried beans
  • 10-12 large flour tortillas
  • Toppings
  • 1 cup peas (I used frozen peas that had been thawed)
  • 1/2 cup diced carrots, diced small
  • 1/2 cup diced red peppers (green peppers look pretty too)
  • 1/2 cup chopped green onions
  • 1 (11 ounce) can sweet corn (I used Green Giant Niblets)
  • 1 cup finely grated cheddar cheese

Instructions

  1. In a mixer, blend cream cheese and sour cream until smooth. Mix in taco seasoning.
  2. In the center of each tortilla, put a small stripe of refried beans. On the rest of the tortilla spread the sauce making sure to get the edges. You want a decent amount to make sure all your toppings will stick.
  3. Sprinkle with toppings and roll up as tight as you can.
  4. Tuck in the ends and wrap in Saran wrap.
  5. *Be sure not to over-stuff or they won?t roll up.
  6. Refrigerate over night or for about 6 hours
  7. Slice before serving and serve with your favorite salsa (we love Chili?s salsa)!
