Mediterranean Chicken and Orzo Salad

One of my biggest pregnancy cravings this time around is Mediterranean food. I could eat it all day, for every. single. meal. I was craving our mom’s pasta salad, and thought it would be really good with a little mediterranean twist. I found this recipe and tweaked it, and we will be eating this one again and again and again.

Ingredients

  • 8 ounces orzo pasta
  • 1/2 cup olive oil
  • 1/3 cup white wine vinegar
  • 2 teaspoons dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup grape tomatoes
  • 1/2 cup kalamata olives
  • 1/2 cucumber, cubed
  • 2 chicken breasts, cooked and cubed
  • 2 ounces crumbled feta cheese

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a small bowl, combine olive oil, vinegar, mustard, garlic powder, oregano, basil, onion powder, salt, and pepper.
  3. In a large bowl, mix together tomatoes, olives, cucumber, chicken, orzo, and dressing. Top with crumbled feta cheese and enjoy.

Notes

We ate this warm, but it also tastes really good cold!
