Loaded Egg Peppers

This recipe is so easy, and it tastes amazing! It is done in a matter of minutes, and it looks and tastes great! These Loaded Egg Peppers are fast, delicious, and healthy! Definitely the perfect way to start off the morning!

  • 4 eggs
  • 1 red Bell pepper (you could use any bell pepper)
  • About 1/2 cup spinach (chopped)
  • 2 tablespoons feta cheese
  • 8 Cherry tomatoes (chopped)
  • Pinch of salt and black pepper


  1. Heat stove to medium-high temperature.
  2. Chop the Red pepper into about 1 centimeter thick slices.
  3. Clean out the seeds and middle so it's just the pepper edges.
  4. Place the peppers on a non-stick pan (or griddle).
  5. Crack the egg over the bell pepper.
  6. Sprinkle desired amount of spinach, feta cheese, cherry tomatoes, salt and pepper, over the egg in the pepper outline.
  7. Let cook for about 2 more minutes, or until desired egg texture.
