Lemon Crinkle Cookies

These Lemon Crinkle Cookies are so simple and taste absolutely delicious. If you like lemon, you are going to love these lemon flavored delights. They are amazing.

Last night, while waiting for my husband to get home from work, I was browsing through Pinterest.  That is always a bad idea.
I found these lovely cookies that my sister had pinned from Tried and Tasty and before I knew it they were baking in the oven, the very next morning.
They were so soft and delicious.  It was a nice change from the usual chocolate chip cookie. They were so refreshing and perfect for spring or summer.
Did I mention how easy they are to make? Because with a cookie recipe that only requires a few ingredients that you most likely already have on hand, why wouldn’t you make these bad boys.
I will warn you though, because they are so light and refreshing, you will probably eat at least 10 within the first few minutes of making them.

what is a crinkle cookie?

Crinkled cookies, are cookies that have more ridges, and baking lines in them. These lines are often brought out by powdered sugar.

The key to making the perfect crinkled cookies include:

  • coating the cookies in either form of sugar (powdered or cane).
  • allow the cookies to harden.

A lot of the time, people reach for a cookie before they have cooled. That makes them warm, soft and delicious, but often times, the crinkling of the cookie takes place after the baking.

This allows the cookies to crinkle and be exposed to more dry air, rather than the heat of the oven.

We also like to sprinkle on a little extra powdered sugar after they bake, to give them that stunning look, if the previous powdered sugar has baked into the cookie.

  • ½ c butter, softened
  • 1 c granulated sugar
  • ½ tsp vanilla extract
  • 1 whole egg
  • 1 tsp lemon zest (I didn't add this because I didn't have a lemon and they were still perfect!)
  • 1 tbsp fresh lemon juice
  • ¼ tsp salt
  • ¼ tsp baking powder
  • ? tsp baking soda
  • 1-½ c all-purpose flour
  • ½ c powdered sugar

  1. Preheat oven to 350 degrees.
  2. Grease light colored baking sheets with non stick cooking spray and set aside. In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly.
  3. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough. Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. Remove from oven and cool cookies about 3 minutes before transferring to cooling rack. If using a non stick darker baking tray, reduce baking time by about 2 minutes.
