Lemon and Dill Salmon

Try baking your salmon in a foil tent for delicious, always moist fish. This recipe includes the perfect combination of dill and lemon to give you the freshest tasting fish straight from your own oven!

There’s nothing better than the taste of fresh fish with fresh herbs! We cannot get enough of this Lemon and Dill Salmon lately.

We recommend using fresh dill and fresh lemon in this recipe, but totally understand that sometimes, shortcuts are the only option!

One of our favorite shortcuts is using freeze dried garlic in our recipes. You don’t have to deal with the stinky mess of mincing garlic, but it tastes just as fresh as if you chopped it up yourself!

Cooking Salmon in a Foil Basket

When I told my husband I was baking salmon for dinner he did not seem very excited! We’ve been pretty big smoked salmon lovers our whole marriage, so this was definitely something new!

I had read a lot about cooking salmon in a foil basket and was excited to try it. It was WAY easier than I thought it would be, and it may just be our new favorite method of cooking fish.

I laid two pieces of foil down across my pan, creating an X. After preparing the salmon as directed, I folded the salmon into the foil, starting with the bottom piece.

Fold the foil around the salmon and roll the edges, securing the salmon in place. Make sure it’s sealed well so it doesn’t let out any of the steam.

You can add your vegetables in this step if you want! We’ve since wrapped ours up with broccoli and asparagus, and both turned out great.

Lemon and Dill Salmon

Ingredients

  • 1 1/2-2 pound salmon fillet
  • 2 teaspoons fish seasoning (or rub)
  • Salt and pepper, to taste
  • 3 Tablespoons butter (melted)
  • 3 lemons
  • 2 cloves garlic (minced)
  • 2 Tablespoons fresh dill (chopped)

Instructions

  1. Preheat oven to 375 degrees and line baking sheet with foil.
  2. Place salmon on prepared baking sheet and fold up foil around all four edges creating a basket.
  3. Season salmon with fish seasoning, salt and pepper
  4. In a bowl, whisk together butter, the juice of one lemon, the zest of one lemon, garlic, and dill.
  5. Spoon butter mixture over the salmon.
  6. Slice remaining lemon and top salmon with evenly spaced slices.
  7. Fold foil over the salmon completely closing and sealing the packet.
  8. Bake until cooked through, about 15-20 minutes.
