Leftover Thanksgiving Dinner Casserole

One of the best parts of Thanksgiving dinner: LEFTOVERS!
We usually just make turkey sandwiches for the days following Thanksgiving, but this is a fun way to mix all my favorites together into a delicious casserole. The layers remind me of Shepherd’s Pie, just in Thanksgiving fashion. 🙂

  • 1 heaping cup diced celery
  • 1 heaping cup diced onion
  • 1 heaping cup apples (optional, but we always put them in our stuffing)
  • 1/3 cup butter, cut into small pieces
  • 6 cups dry herbed stuffing cubes
  • 1 cup chicken broth
  • 4 cups cooked turkey, cubed or shredded
  • 2 cans (10.75 oz each) cream of chicken soup
  • 1 teaspoon garlic powder
  • 1/4 cup sour cream
  • 3-4 cup mashed potatoes (can use leftovers or even instant mashed potatoes)
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1-1/2 cups (6 ounces) shredded cheddar cheese


  1. In a large skillet, saute celery, onion, and apples in butter until tender. Remove from the heat.
  2. In a large bowl, combine the stuffing cubes, broth, and celery mixture. Transfer to a 9x13" baking pan that has been sprayed with non-stick cooking spray.
  3. In another large bowl, combine the turkey, soup, garlic powder and 1/4 cup sour cream; spoon over stuffing mixture. Spread mashed potatoes over turkey mixture. Sprinkle with cheese.
  4. Bake, uncovered, at 350° for 30-35 minutes or until heated through.
