Leftover Thanksgiving Dinner Casserole

One of the best parts of Thanksgiving dinner: LEFTOVERS!
We usually just make turkey sandwiches for the days following Thanksgiving, but this is a fun way to mix all my favorites together into a delicious casserole. The layers remind me of Shepherd’s Pie, just in Thanksgiving fashion. 🙂

Ingredients

  • 3 stalks celery (diced)
  • 1 onion (diced)
  • 2 apples (seeded and diced)
  • 1/3 cup butter
  • 6 cups dry herbed stuffing cubes
  • 1 cup chicken broth
  • 4 cups cooked turkey (cubed)
  • 2 (10.75 ounce) cans cream of chicken soup
  • 1 teaspoon garlic powder
  • 1/4 cup sour cream
  • 4 cups mashed potatoes (leftovers or instant work great)
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. In a large skillet, saute celery, onion, and apples in butter until tender.
  2. Remove from the heat and set aside.
  3. In a large bowl, combine the stuffing cubes, broth, and celery mixture.
  4. Transfer to a 9 x 13 inch baking pan that has been sprayed with non-stick cooking spray, spread around in the pan.
  5. In another large bowl, combine the turkey, soup, garlic powder and 1/4 cup sour cream; spoon over stuffing mixture. Spread mashed potatoes over turkey mixture. Season with salt and pepper. Sprinkle with cheese.
  6. Bake uncovered at 350° for 35-40 minutes or until heated through.
