Sometimes I wonder if I am making these Instant Pot carrots for my kids so they will eat something remotely healthy, or if that is really just a ploy because I love them so much! Either way, they are truly AMAZING.
I even make these to bring to potlucks and different events. I always get so many compliments on them. Plus it doesn’t hurt that it is an easy Instant Pot recipe to make up super quick! You know for those times when your significant other “forgot” to tell you that they had to bring something to a get together the next day.
This is also an easy side dish you can whip up to pair with any family dinner recipe. Or if you just want to make it and just eat the carrots that’s okay too. You’ll understand why you would want to do that after you make them the first time! 😉

Quick and easy how-to for these Instant Pot glazed carrots!
Start by peeling and slicing your carrots. Once that is done get out your Instant Pot.
Now, add in the prepped carrots to the inner pot of the Instant Pot as well as the water along with it.
PRO TIP: Be sure to not forget the water. If you do not have enough liquid in the Instant pot you could receive the “BURN” notice. You can learn more about that HERE where Kristen tells you all about it and how to avoid it!
Next, once the cut carrots and water are in the Instant Pot return the lid and turn it to lock it into place. Then, make sure that the knob is turned to the “SEALING” position.
Now, press the “MANUAL” or “PRESSURE COOK” button and set the time for 3 minutes.
After the timer goes off you will need to do a quick release by turning the knob to the “VENTING” position.
Once all of the pressure has been released, pour the carrots into the colander to drain the water.
Add the carrots back to the Instant Pot along with the olive oil, honey, salt, and pepper and toss everything together until the carrots are coated.
Then, simply garnish with the fresh parsley if you’d like and then serve them right away!
