Healthy Stuffed Green Peppers

We love Green peppers in our family and they aren’t very expensive right now in the grocery store! This is one of my favorite recipes when I’m craving the pepper! 🙂

  • 5 cups water
  • 6 large green bell peppers
  • 1 pound ground turkey
  • 1/2 onion (chopped)
  • 2 teaspoons salt
  • 1/2 teaspoon garlic salt
  • 1 cup quick cooking brown rice
  • 1 (15 ounce) can tomato sauce (divided)
  • 1 cup shredded mozzarella cheese


  1. In a large pot, boil 5 cups of salted water.
  2. Cut off the top of each pepper, clean out seeds and membranes and then wash them really well.
  3. Cook peppers in the boiling water for 5 minutes then drain.
  4. In a large skillet, cook and stir ground turkey and onion until onion is tender. Drain off any fat. Stir in salt, garlic salt, rice and 1 cup (8 ounces) of tomato sauce. Heat through.
  5. Stuff each pepper with meat mixture.
  6. Stand the peppers upright in an ungreased baking dish.
  7. Pour remaining tomato sauce over peppers.
  8. Cover with foil and bake at 350 degrees for 30 minutes.
  9. Remove from oven, uncover, and top with shredded mozzarella cheese.
  10. Bake for an additional 15 minutes.

  1. Trying hard to stick with my family's favorite meals, while altering for my WW plan, while not losing get the picture. Stuffed peppers are a huge hit in our house, and these were actually declared the best recipe yet. Coming from my husband and 4 teenagers, that's high praise. Thank you Six Sisters' Stuff!
