Healthy Meals Monday: Tomato, Basil, and Cheese Sandwich

I am loving sandwiches lately. They are just so easy to make, and the ultimate comfort food. However, they aren't exactly the most healthy food, so I tried my best to make a healthy, cheesy, sandwich. But not just any sandwich, a Tomato, Basil and Cheese Sandwich.

I love tomato and cheese sandwiches and this is a new twist on an old combo that you have to try.

This is a healthy, delicious, simple, inexpensive, and comfort food sandwich, that the whole family is going to love.

We even have these for dinner some nights, when I just don’t have the energy to cook, or create a huge meal.

These are filling and easy to make.

Did I mention they are healthy? It’s a win win. Everyone loves a good sandwich, and this one is out of this world, delicious.

Also, can we just appreciate how fresh it looks? Ugh, I am now craving one.

what meat could i add to this sandwich?

I love a good thick sandwich with all the fixings. Every now and then, it’s nice to have a sandwich without any meat. Just a classic healthy sandwich, that doesn’t leave you feeling heavy.

However, my husband is a big meat eater (I guess I am too a little bit) so we like to add meat to our sandwiches to make them a little more filling.

Here are a few of our favorites to add to this sandwich (we even like a combination of meats)

-Chicken Sausage
-Roast Beef

Healthy Meals Monday: Tomato, Basil, and Cheese Sandwich

  • 2-4 low fat slices mozzarella cheese, enough to cover your roll
  • 1 tomato, sliced
  • 3 fresh basil leaves
  • 1 teaspoon olive oil
  • 1 teaspoon balsamic vinegar
  • (mix oil and vinegar together)


  1. Sprinkle cut sides of roll with balsamic vinegar and oil. On one side of the roll layer your cheese. On the other side layer your tomato slices and basil leaves.
  2. Turn your oven to Broil and put the both sides of the sandwich on a cookie sheet or pan. Check every minute. Wait till edges brown and cheese is melted. (it should only take about 2 minutes).
  3. Put together and enjoy!
