Healthy Meals Monday: Heavenly Halibut

This Heavenly Halibut, really lives up to it's name. It is so delicious, and it's also very healthy. It's the best of both worlds, and comes together in a matter of minutes. Your family is going to love this simple and delicious recipe.

Hi, I’m Kristen and I’m the sister who posts on Healthy Meals Monday. I’ll be honest… I wasn’t much of a healthy eater until I married my husband.
I actually weighed about 20 lbs more in high school than I do right now. But being married to someone who doesn’t eat treats and has to have most of his veggies for the day some times can be difficult.
I don’t love veggies but have started to enjoy them more. I try to post meals that include veggies and are lower in calories (then you don’t feel so guilty when you have a yummy dessert).
This Halibut is truly Heavenly, hence the name, Heavenly Halibut. I am not much of a fish lover, so I wasn’t so sure about this recipe at first, but I really do love it.
The fish taste is very subtle, and it almost tastes more like chicken, just a little softer. My kids even gobbled this recipe right up.
It’s the perfect dinner. It’s healthy, simple, easy to make, and tastes delicious.

what could I serve with this recipe?

Fish can be a tricky recipe, to pair sides with, however, we have a few ideas your family will love. They are simple and come together quickly, because who has time for side dishes, after making a main dish?

Here are a few sides, we recommend for this recipe:

Asparagus: This vegetable pairs nicely with any kind of fish. Whether you cook them together or separate, they taste so yummy together.

We recommend trying our Ranch Asparagus recipe, to go with this Baked Mexican Fish.

Brussel Sprouts: Like asparagus, brussel sprouts pair nicely with fish dishes. We highly recommend trying out our Honey Sriracha Brussel Sprouts.

-Corn: For this particular recipe, corn would also be a delicious side dish. We highly recommend trying out our Mexican Street Corn Salad Recipe.

    • Hi Sandra, This is one of our older pictures. I'm sure Kristen just added some other cheese along with the mozzarella. We are slowly trying to update pictures in our older posts. Thanks so much for stopping by our blog. This really is delicious halibut!

I’ve made this dish several times and it is delicious. I always put a thick layer of fresh spinach on the bottom of the buttered pan before I broil it. The spinach absorbs excess butter lemon juice etc. and it is so delicious. Also makes for a one meal deal doing it that way. I also add capers to the cheese mixture
