Healthy Meals Monday: Creamy Chicken Broccoli Casserole Recipe

I love a quick and healthy dinner, especially when my kids will devour it in minutes. This recipe is picky eater approved and tastes amazing. It's definitely in our dinner rotation from here on out, it is that tasty.

My husband loves a good casserole.  Whenever I ask what he wants for dinner, he always rattles off names of casseroles his mom would make growing up.
We threw this one into the rotation and he loved it. Nothing beats being able to throw a casserole together in the morning then pop it in the oven before dinner.
This recipe was so easy and my whole family enjoyed it.  It is creamy enough that you could serve it over pasta.
You could also serve it over rice or potatoes as well.
It’s simple, quick, full of flavor, and only requires a few simple ingredients.
If you are needing a new and delicious dinner recipe, this is one I highly recommend trying.

what could i replace the cream cheese with?

This recipe calls for fat free cream cheese, however, if you still don’t love the idea of it, you could easily switch it out for something else.

I recommend using plain Greek yogurt, instead. You could also do half the cream cheese, and half the plain Greek yogurt, as well.

The texture will be a little different, but it will still be delicious, and even more healthy, with plenty of protein.

what is the best way to prepare the cooked chicken, for this recipe?

This recipe calls for cooked chicken. I usually grill or boil my chicken, then shred or chop it up. I prefer to boil it, but if it is summer time, I usually prefer to use leftover grilled chicken, as it is one less step for me to do.

You could also use your Instant Pot to cook the chicken as well. I usually just boil my chicken, but any method of cooking it, would work great, depending on what you prefer.

If you do grill your chicken, you may want to use a more mild marinade without a ton of flavor, unless it is one that pairs nicely with cheese.

Ingredients

  • 4-5 chicken breasts
  • 1 bag frozen broccoli
  • 2 (8 oz.) boxes of cream cheese (you can use Neufchatel or Fat Free)
  • 2 cups milk
  • 2 tsp. garlic salt
  • 3/4 cup Parmesan cheese
  • Ritz cracker crumbs for topping

Instructions

  1. Cook the chicken, then slice or break it into bite size pieces.
  2. Cook broccoli in salted water.
  3. Place the broccoli in a 9x13 greased casserole dish.
  4. Heat the milk, cream cheese, garlic salt and Parmesan cheese over low heat, stirring till the mixture is smooth.
  5. Pour 1 cup of sauce over the broccoli.  Now add the chicken into the pan and pour rest of sauce over it.  Sprinkle the top with 1/4 cup Parmesan cheese and Ritz cracker crumbs.
  6. Bake at 350 degrees for 25 to 30 minutes.  (Note: watch the sauce while baking, it can get too hot and burn on top!)

      I configured this using 5 chicken breasts, and the above recipe making six servings.

    • We ususally just boil the chicken breast and then dice it up into small bite sized pieces. When we are really cramped for time we will buy a rotisserie chicken. You could even grill it outside or on some type of indoor grilling appliance..like a George Foreman Grill. Whatever works. Boiling is usually the easiest.
