Healthy Meals Monday: Chicken Lime Soft Tacos

I don’t know about you.. but I have had a LOT of treats during this holiday season! It really feels good to eat something healthy. This is one of my favorites! Enjoy!
Chicken Lime Soft Tacos

1 ½ lbs. boneless, skinless chicken breasts, cut into chunks or strips
¼ c. red wine vinegar
1 lime, juiced
2 t. sugar
1 t. salt
1 t. ground black pepper
2 green onions, minced
2 cloves garlic, minced
¼ – ½ c. fresh cilantro, chopped (more or less to taste)

Soft Whole Wheat Tortillas
Diced tomatoes
Shredded lettuce (I Love Spinach on these)
Shredded cheese
Light Sour cream
Other favorite taco toppings
Sauté chicken over medium high heat until browned. Add vinegar, lime
juice, sugar, salt, pepper, green onion, and garlic. Simmer 10
minutes or until chicken is cooked thoroughly. Add cilantro and
simmer for an additional 30 seconds. Serve on warmed tortillas with
desired toppings.
If you want to change it up a bit sometimes we use halibut instead of chicken! It is DELICIOUS!!!

  1. @Amy Lee- Red Wine Vinegar is available at any grocery store and it's super inexpensive! It also has great flavor! Aceto bacter bacteria actually transforms the alcohol in the vinegar into acetic acid, but if you still want to substitute something else, you can use an apple cider vinegar or distilled vinegar. Both of those would work just fine.
