Skinny Chicken Alfredo Recipe

My husband’s favorite meal of all time is chicken Alfredo!  He has been watching his weight lately, so I thought a lighter version of his favorite dish would earn me some major brownie points.  This recipe is so easy to make and tastes absolutely amazing!  My husband said it tasted better than the regular version of chicken Alfredo we typically make!

Skinny Chicken Alfredo Recipe

A lightened up version of a family favorite!

  • 2 1/2 cups low fat milk
  • 4 ounces low fat cream cheese
  • 3 Tablespoons flour
  • 1 teaspoon salt
  • 1 Tablespoon butter
  • 3 teaspoons minced garlic
  • 2/3 cup grated parmesan cheese
  • 2-3 chicken breasts, cooked and sliced
  • 8 ounces fettuccine pasta
  • fresh parsley, for garnish


  1. Place milk, cream cheese, flour and salt in a blender and blend until smooth.
  2. In a skillet over medium heat, melt butter and saute garlic for 1 minute.
  3. Add milk mixture to the pan and stir constantly for 3-5 minutes or until it begins to simmer.
  4. Continue stirring over heat for a few minutes until sauce reaches desired thickness.
  5. Add cheese and cooked chicken and toss together.
  6. Pour over prepared pasta and serve.
  7. Garnish with fresh parsley, if desired.

    Hi Six Sisters! I just wanted to say that I love all your recipes. Every single one I've tried is amazing! Quick question, I don't have a blender. Could I use my Kitchen Aid stand mixer? Also I used grated parmesan topping in my first run of this recipe, like the kind you put on top of pasta. Was I supposed to use shredded parmesan cheese? Thanks!! :)
  5. I made this tonight, it was good, but i would suggest using a little less parm cheese. Mine was very thick so I would suggest using more milk, and less cheese. It was still good, but I'd like it to be a lot less thick. It was really good though.
