Guacamole and Bacon Potato Salad

Ingredients
- 2 pounds small red potatoes, quartered
- 6 bacon strips, cooked and crumbled (you can add more if you would like!)
- 6 green onions, minced
- 1 (8 oz) package of premade Wholly Guacamole
- 1/2 cup sour cream
- 2 tablespoons milk
- 3 Tablespoons mayonnaise
- 1 Tablespoon of yellow mustard
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce the heat to low. Cover and simmer for 15-20 minutes or until tender. Drain and refrigerate until cooled.
- In a large bowl, combine the chilled potatoes, bacon and onions. For the dressing combine Wholly Guacamole, sour cream, milk, mayonnaise, mustard, salt and pepper. Mix together until well blended.
- Pour over potato mixture and toss to coat. Chill until ready to serve.
