Christmas breakfast is a big deal around here.

Waking up on Christmas morning to the delicious smell of breakfast was almost as exciting as seeing all the beautiful presents under the tree.

Now that we are older, this breakfast has become our favorite part. We love spending the morning together and enjoying delicious food together before we open presents.

These Gingerbread Pancakes will definitely be on the table this year, and I can hardly wait.

could i make this recipe with pancake mix?

You could make this recipe with pancake mix, then combine the wet ingredients listed in the directions, however, we don’t recommend it.

We have found this recipe works best when made from scratch. They get a weird texture when you try and make this with pancake mix, so we recommend using flour, baking powder, and baking soda, and following the recipe from there.

what are the best toppings to put on Pancakes?

I am a toppings girl, all the way. It’s not breakfast or any dish, if it doesn’t have toppings. I have a lot of favorite pancake toppings, so here are a few of the best:

-Cinnamon and Sugar. I love spreading a little butter on my pancakes, then sprinkling it with cinnamon and sugar. You can also spread a little frosting glaze over it as well.

-Fruit and Whipped Cream. This is a pancake classic. It is also super easy to add to any pancake dish.

-Nutella and Strawberries. Have you ever dipped a strawberry in Nutella? Well prepare to have your life changed. It is delicious, but add it to pancakes, and it becomes a dream come true.

-Strawberries, Bananas and Powdered Sugar. This is also a pancake classic, because it is simple, inexpensive, and tastes amazing. All you need is some syrup, and breakfast is served.

We love these Gingerbread Pancakes for Christmas Breakfast!

  • 1 1/2 cups of flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon pumpkin pie spice
  • 1/8 teaspoon cloves
  • 1/8 teaspoon nutmeg
  • 1/3 cup brown sugar
  • 2 Tablespoons molasses
  • 2 eggs
  • 4 Tablespoons butter, melted
  • 3/4 cup milk


  1. Preheat skillet to 350 degrees (medium heat)
  2. In a large bowl, whisk together all dry ingredients.
  3. In a separate bowl, mix eggs, milk, molasses, and butter.
  4. Slowly add wet ingredients to dry ingredients and stir until combined, do not over-mix.
  5. Scoop about 1/4 of mixture onto skillet, and flip when top begins to bubble (about 2 minutes)
  6. Cook for 2 more minutes until pancakes are lightly golden brown.
  7. Top with your favorite syrup and powdered sugar. Enjoy!

  1. These were delicious!!! My daughter requested this flavor and I wasn't sure if I'd like them because I'm not a *huge* fan of gingerbread, but I like it alright. These were not too strong and absolutely amazing. Fluffy and you get a bit of a crunch on the edges from the brown sugar. I rarely eat a full pancake (gotta save the calories for something absolutely worth it!) and I couldn't put this one down. ;) No syrup needed here! :) Thanks! Can't wait to make them again. Oh-and my house smells like fall-bonus!
  2. Tried these this morning - a cold rainy day here so needed something to feel cosy and fend off the winter blues. I was a bit sceptical when mixing the batter as the molasses seemed like it would overpower everything but the result was amazing. They were like warm fluffy gingerbread cakes. Light but filling. For me, they were sweet enough and didn’t need any syrup. I used half the batch and the rest is in the fridge so I expect the spices will develop overnight. Can’t wait! Just out of curiosity, would this work with buttermilk?
