I have had to get creative with all my tomatoes this year (my tomato plants basically took over my entire garden) and have been eating tomatoes with every single meal.

It’s a good thing that I love tomato sandwiches – tomatoes, mayo, homemade bread . . . it doesn’t get any better than that!

I made our Baked Bruschetta Chicken and fell in love with bruschetta. I used that same recipe to put on top of baguette bread and served it as an appetizer at a bridal shower and it was a big hit!

This bruschetta would be the perfect appetizer or side dish for any party, get-together, or even lunch for yourself. Let’s be honest- I just eat it straight out of the bowl with a spoon.

How to make Bruschetta taste the best

This recipe tastes so fresh and delicious. We love using tomatoes from our garden or locally grown from our grocery store.

The trick to the best tasting bruschetta is using all fresh ingredients. We’d recommend using fresh garlic, and fresh basil, rather than dried, jarred, or freeze dried.

You will definitely notice the difference in flavor using fresh vs. pantry ingredients, and so will your taste testers!

The beauty of bruschetta is that you can make add as many fresh and delicious ingredients as you want! Here are a few ingredients we’ve added here and there over the years. Find your favorite flavor and make it your own.

  • Feta Cheese
  • Mint
  • Additional Balsamic Drizzle
  • Mozzarella Cheese
  • Chopped Sweet Onion
  • Green Tomatoes
  • Sliced Olives

How to Serve Bruschetta

In this recipe, we serve our fresh bruschetta over a sliced and toasted baguette, but there are a lot of ways to serve it.

You can serve this recipe on crackers, cucumbers, or as a dip with tortilla chips. It’s also delicious with pita bread.

If you choose to serve over a baguette, we’d highly recommend toasting it beforehand to prevent the bread from getting soggy too fast.

Fresh Bruschetta Recipe

A quick and easy bruschetta that is loaded with fresh flavor. This is one of my favorite appetizers!

Ingredients

  • 3 cups tomatoes, diced (I used a mix of roma and cherry tomatoes because that's what I had on hand)
  • 2 teaspoons minced garlic (I just use the kind in the jar)
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • 4 tablespoons fresh basil leaves, finely chopped (or 2 teaspoons dried basil leaves, but fresh adds a lot more flavor)
  • 2 tablespoons balsamic vinegar
  • salt and pepper to taste
  • 1 loaf baguette bread

Instructions

  1. In a large bowl, mix together tomatoes, garlic, olive oil, Parmesan cheese, basil, and balsamic vinegar. Add salt and pepper as needed. Cover bowl, place in the fridge, and let the flavor meld together for 15-30 minutes (up to 3-4 hours - it tastes even better the longer it sits!).
  2. Cut baguette bread into 1/2" - 3/4" slices. Top with a scoop of tomato mixture and serve.
