Easy Easter Sugar Cookies (3 Different Ways)

Last week, I was on a local lifestyle TV show and shared 3 easy ways to decorate a sugar cookie for Easter. My kids love helping me in the kitchen, so I wanted to make some simple sugar cookies that they could help me with and this is what we came up with! The possibilities really are endless!

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup margarine, softened
  • 1/4 cup sour cream
  • 2 eggs
  • 1 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/4 cup milk
  • 4 cups flour
  • Frosting:
  • 1/2 cup butter, softened
  • 1/4 cup milk
  • 2 teaspoons vanilla
  • 4 cups powdered sugar (more or less depending on how thick/runny you like it)
  • Food coloring, optional
  • Other toppings for cookies:
  • large marshmallows
  • pink sugar crystals or sparkles
  • jellybeans
  • chocolate chips
  • shredded coconut
  • Orange AirHead candy
  • Marshmallow Chick
  • Chocolate eggs

Instructions

  1. Preheat oven to 375 degrees.
  2. In a bowl, cream butter, margarine, and sour cream together. Add eggs and sugar and mix well. Add baking powder, baking soda, salt, vanilla and milk and mix well. Add flour and mix again.
  3. Roll out dough to about 1/4" - 3/8" thick and using a circle cookie cutter, cut as many shapes as you can. Place cookies on an ungreased cookie sheet and bake for 6-8 minutes (you do not want to over bake these cookies - if the cookies turn a golden color, you have cooked them for too long).
  4. Remove cookies from cookie sheet and let cool on a wire rack.
  5. While cookies are cooling, combine all frosting ingredients in a large bowl. Divide frosting evenly into three smaller bowls. Using food coloring, tint one bowl green, another bowl yellow and leave the third bowl white.
  6. To make a bunny cookie, frost cookie with white frosting. Take one large marshmallow and cut it in half on an angle. Dip each half (the stick side) into the pink sparkles to make bunny ears. Place ears on top of frosted cookie, along with two chocolate chips for eyes and a jelly bean for a nose.
  7. To make a chick cookie, place about 1 cup of shredded coconut inside a sandwich-sized Ziploc bag. Add three drops of yellow food coloring, then seal the bag. Shake until all the coconut is coated with food coloring. Frost a cookie with yellow frosting, then top with yellow coconut. Use two chocolate chips for the eyes and then cut a beak out of the orange Air Head candy.
  8. To make a birds nest, use the same technique to make green coconut. Frost a cookie with green frosting, then top with green coconut. Add a marshmallow chick and then surround it with some chocolate eggs to make a little birds nest.

To make the bunny cookie, frost with white frosting, make the bunny ears (see step-by-step pics below), and add a chocolate chips for eyes and a jelly bean for the nose.

To dye coconut for your other cookies, simply add 1 cup of shredded coconut to a ziploc bag. Add in 3-4 drops of food coloring, seal the bag, and shake until all the coconut has been dyed.

To make the chick sugar cookie, frost a cookie with yellow frosting. Top with yellow coconut, then use two chocolate chips for the eyes and cut a triangle out of an AirHead candy for the beak.
