Chocolate Caramel Nutella Cookies Recipe

These Chocolate Caramel Nutella Cookies, are what Nutella fans dream about. A boxed cake mix, Nutella, and chewy caramel put these cookies over the top delicious!

I have never met a Nutella recipe I didn’t like.  These cookies are packed full of so many delicious flavors that you will most likely end up eating way too many of them….at least that is what happened to me.

I have no shame because they were just that good. The Nutella with the caramel is a combination that everyone needs to experience.

These cookies are probably a little different than what you are used to. We used a boxed cake mix in this recipe instead of our own dry ingredients. If you haven’t made cookies with a cake mix, you’re in for a real treat! Using the cake mix and Nutella in these chocolate cookies keeps them very moist!

You need these cookies in your life and I promise you are not going to regret it. They are the best cookies I have ever tasted!

Can you freeze nutella cookies?

I have a strange obsession with frozen cookies. I usually don’t have any leftover to freeze, because I love eating cookies as soon as they come out of the oven (I even take the risk of getting a burnt tongue from the melted chocolate), but frozen cookies are so yummy.

Freezing cookies is also a great way to store them! Make a big batch today and enjoy cookies for weeks to come!

These cookies freeze extremely well. Make sure to place them in a large Ziploc Freezer Bag or freezer proof Tupperware.

To thaw, just pop them in the microwave for a few seconds. Or take them out of the freezer and let them thaw for a few hours for perfectly chewy Nutella Caramel Cookies.

We’re not the only ones who love to keep cookies in our freezer! Taste of Home has an amazing list of 63 Cookies to Keep in Your Freezer, we’d highly recommend cookie #10!

How do you make chocolate caramel nutella cookies?

These cookies are pretty simple! Using a cake mix in your cookies takes away a lot of your steps. Here’s how to make Chocolate Caramel Nutella Cookies, step by step.

Step 1: Preheat your oven to 350 degrees and prep a cookie sheet (not greased). You can also line your pan with parchment paper.

Step 2: In a large mixing bowl, combine your cake mix, Nutella, eggs, and oil until combined.

Step 3: Fold in chocolate chips and caramel bits.

Step 4: Roll dough into 1-inch balls and place them on your cookie sheet.

Pro tip: save some caramel bits for after your roll out your dough and place a few extras on top of each cookie. This will ensure chewy delicious caramel in each bite!

Step 5: Bake for 8-10 minutes. Bake for less if you like the middle a little more doughy! These are best served warm while the caramel is still melted.

Where do I find caramel bits?

Can’t find caramel bits at your grocery store? Don’t forget to check the chocolate chip section!

While most grocery stores carry caramel bits, some do not. But don’t worry! You can still make Chocolate Caramel Nutella Cookies.

Grab a bag of your favorite individually wrapped caramels for these cookies. Just cut each caramel into 8 or so pieces and add them into your dough or on top of your cookies.

This caramel is made for baking so it will melt right into the cookies just like the caramel bits would. You won’t even notice the difference!

Why do my nutella caramel cookies stick to the pan?

These cookies are a little sticky due to the caramel bits that are in them. To keep the cookies from sticking to the pan, we recommend lining the pan with parchment paper or using a silpat mat, to bake them on.

We do not recommend spraying the pan with non stick cooking spray. It won’t work as well as the silpat mat or the parchment paper. Cooking spray can also affect the taste of the cookies.

Another option is to leave the caramel out of the cookies until they are scooped onto the pan. You can insert a few caramel pieces into the top of each cookie to keep them off the bottom.

Not only does this help with sticking, but it makes sure each bite is full of delicious melted caramel.

  1. These taste great! BUT, when I baked them, if any caramel bits were on the bottom of the cookie, they stuck to the pans badly, and they just tore up. Of course, we still ate the torn mess because it was so good though! After doing some reading, I see that someone recommended using parchment paper when baking with caramel, so I'm going to try that this week. Any other suggestions?? Thanks!
