Stuck in a lunch rut? These chicken pinwheels are a fun way to mix it up. With cucumbers, tomatoes, and lettuce, they make a light, healthy after-school snack, too.

I love making these for busy days. I make them at the beginning of the week and we eat them for snacks, lunch, and even dinner.

They take minutes to throw together, and a great way to sneak vegetables in your kids.

what other sauce could i add to these chicken wraps?

This recipe calls for spreadable cheese, however, you could easily replace that.

Here are a few spread recommendations:

-Hummus: Hummus is both full of protein and delicious. It is a perfect, healthy alternative to spreadable cheese.

-Plain Greek Yogurt: I often use plain Greek yogurt as sour cream. They have a smilier flavor and texture, and my kids honestly can’t tell the difference. It is definitely more healthy than sour cream.

-Ranch: My kids love ranch, and always ask to dip their pinwheels in it. If you are looking for a healthy ranch alternative, you could also mix ranch dressing mix, with plain Greek yogurt.

-Salad Dressing: I love adding a little vinaigrette to my wraps.

Ingredients

  • 4 spinach tortillas
  • 4 spreadable cheese wedges
  • 1 lb deli-sliced chicken breast
  • 4 lettuce leaves
  • 1 cucumber, sliced thing lengthwise
  • 1 tomato, sliced

Instructions

  1. Cover each tortilla with a wedge of spreadable cheese. Layer sliced chicken breast, lettuce, cucumber slices, tomatoes on each tortilla. Roll up, and cut into 1" slices. Serves 4.
