Chicken Club Quesadillas Recipe

Shortly after my husband and I were married, I started hinting that I wanted to have children . . . lots of them! When I finally got him on board with the whole baby idea, it took a VERY long time for us to get pregnant. Miraculously, our sweet baby girl was born and suddenly my dream of having a big family changed a little bit . . .Instead of thinking of having 6 kids, I decided that 5 would be more realistic. A couple of years later, I had another baby and I remember thinking, “Maybe just 4. 4 kids is a great number.” Then another daughter joined the fam and as I was up in the middle of the night feeding my baby, I remember thinking in my sleep-deprived brain, “3 kids. 3 kids is more than enough.” 🙂 But mothering is a tough job! One of the biggest eye-openers to me has been mealtime.  My kids have all been picky eaters and it seems to get worse and worse until they turn about 5 years old.

I refuse to be a short-order cook and make a million different dishes for everyone, so I try to find dishes that everyone likes. Sandwiches are a popular choice, especially in the summer when I hate to turn on my oven, and everyone can pick the toppings that they want on their sandwich. These quesadillas are a fun twist on one of our favorite sandwiches and will become an instant family favorite in your home!

Chicken Club Quesadillas Recipe

  • 8 flour tortillas
  • 8 slices deli-sliced chicken breast (or turkey works too!)
  • 8 slices deli-sliced ham
  • 8 slices cheddar cheese
  • 8 strips of bacon, cooked
  • favorite sandwich toppings (mayonnaise, tomato, lettuce, pickles, banana peppers, etc)
  • Directions:


  1. Spread mayonnaise on each of the tortillas (if using mayo).
  2. Layer the chicken, ham, cheese, bacon, and other toppings on half of each tortilla, fold the tortilla over and press down when you are finished putting toppings on it.
  3. Heat a skillet over medium heat. Lightly brush melted butter (or olive oil) on both sides of the tortilla.
  4. Cook two filled tortillas at a time (3-4 minutes each; until they are golden brown), turning over once.

    I love this story...yes, our ideals of the number in our family often changes...I've finally come to terms with the fact that I think we are "done" and it's a tough pill to swallow. I love quasadilla's, and they are generally a kid crowd pleaser, too!
  2. I just wanted to thank you for letting me copy your recipe. I love to collect recipes on my computer. My husband and I live in an RV so I have very little room for cookbooks. Using my computer to save recipes makes it so easy and space effective. I try to keep the site I got the recipe from with it so when I share a recipe with someone I can give credit where due.
