Cheesy Refried Bean Bake

I have just 7 short weeks left of this pregnancy!  It is crazy how fast this pregnancy has gone by.  I felt like my previous pregnancies were so long but this baby will be here before I know it!

easterI guess I also have these two to keep me busy!  We tried to get an Easter picture before church and this was the best we could do! Haha!  They have a lot of energy!

I haven’t had a ton of cravings except for peach ring candy, fruity beverages and Mexican food.  Seriously, just hand me a bowl of chips and salsa and I will be the happiest pregnant lady on earth.  This recipe was so easy to make and definitely hit the spot!  We ate it with chips as more of a dip, but you could easily serve it as a side dish!


Cheesy Refried Bean Bake Recipe:
(makes 6 servings)

1 Tablespoon butter
1/4 cup chopped onion
1 Tablespoon minced garlic
1 (16 ounce) can refried beans
1 (4 ounce) package cream cheese
1 cup shredded cheddar cheese
2 green onions, chopped

Preheat oven to 350 degrees F.  Melt butter in a saucepan over medium heat and saute onion and garlic for 2-3 minutes, or until onions are soft.  Add refried beans to the sauce pan and stir until heated through.  Remove from heat and fold in cream cheese.  Spread mixture into a pie dish and top with cheese.  Bake for 15-20 minutes, or until cheese is completely melted.  Garnish with green onion.

    Awesome recipe! (I just bought 10 cans of refried beans at Albertson's today because they were having a big sale.) With my little one, my third trimester was all Mexican food, all the time. I had Mexican for supper and then leftovers for the following breakfast and lunch. My husband had to go on Mex detox after Muffin was born.
