Cheesy Potato Wedges

So, before you read the directions, you should just know – these babies are made in the microwave. Really. I know that some of you may be a little hesitant to try baking potatoes in the microwave, but trust me. It works. And they may not be as crispy as fried potato wedges, but I think they are still a great-tasting side dish. I think they’re even tastier just because they literally take less than ten minutes to prepare from start to finish, and your whole house doesn’t smell like french fries. It’s a win-win!

  • 3 Medium Russet Potatoes
  • 1/4 cup Parmesan cheese
  • 1 teaspoon garlic salt
  • 1 tablespoon seasoning salt (I use Johnny's - not sponsored, it's just my favorite)
  • 1 tablespoon butter, melted

  1. Scrub potatoes clean, and cut into eight wedges, lengthwise
  2. Place Parmesan cheese, garlic salt, and seasoning salt in a large ziploc bag.
  3. Add potatoes to the bag and shake until they are evenly coated.
  4. Arrange potatoes on a large platter and cook for 4 minutes in the microwave.
  5. Rearrange the potatoes, and cook for another 4 minutes.
  6. In a small bowl, combine melted butter and the leftover Parmesan mixture. Spread it over the potatoes and serve.
