Cake Mix Peanut Butter Bars

I love when I find good cake mix recipes because I know I will usually have all of the ingredients on hand! These Peanut Butter Cake Mix Bars were perfect for someone like me who can’t quite seem to get enough peanut butter into my diet, but don’t like to spend a ton of time in the kitchen! So easy, and so delicious, you’ll be making them for every occasion!

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vanilla flavored greek yogurt
  • 1/2 cup honey
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 1 cup mashed ripe banana (about 2 large)
  • 1 cup dark chocolate chips (plus more for garnish, if desired)

Instructions

  1. Preheat oven to 350 degrees. Lightly grease and flour a 9x5-inch loaf pan and set aside.
  2. In a medium bowl, mix together the flour, cocoa powder, baking powder and salt.
  3. In a separate bowl, use an electric mixer to beat together the yogurt, honey, egg and vanilla.
  4. Add half the flour mixture into the yogurt mixture and beat on low speed while slowly pouring in half the milk. Turn mixer off, scrape down the sides with a spatula and then add remaining flour mixture to the bowl with the remaining milk.
  5. Stir in the mashed bananas until well combined. Fold in the chocolate chips.
  6. Spread batter into prepared loaf pan. Press more chocolate chips into the top of the batter before baking, if desired.
  7. Bake on the middle rack of the oven for about 50 minutes or until a toothpick inserted in the center of the loaf comes out clean.
  8. Let the bread cool in the pan for about 20 minutes before removing to a wire rack to cool completely.

    • No problems on our end. Here is the recipe - INGREDIENTS 1 cup of Peanut Butter 1/2 cup water 1 large egg 15.25 ounces Yellow Cake Mix For the frosting: 1 stick margarine (1/2 c.), softened 1/4 cup milk 1-2 tsp vanilla (depending on your taste) 3 tablespoons of cocoa 2-3 cups of powdered sugar INSTRUCTIONS Heat the oven to 350°F. Spray a 13 X 9-inch pan with no-stick cooking spray. In a medium bowl combine 1 cup of peanut butter, water and egg in large bowl, stirring until smooth. Stir in cake mix until blended well. Spread into prepared pan. BAKE 20 to 25 minutes or until puffed and light golden brown. Cool completely. Mix all ingredients with a hand mixer until smooth. Add more powdered sugar or milk until you reach desired consistency and spread on top of bars.
