In a house with three little kids, we take celebrating holidays pretty seriously. My kids love St. Patrick’s Day and I love all the cute green treats that come with it.
I personally am not a fan of the pinching and the small fights that come from pinching, but if St. Patricks’s Day means I get to make and eat these cookies to my hearts content, it may just be my new favorite holiday.
These cookies are perfectly soft and chewy and the mint frosting in the middle is so good. This is also a fun recipe that the kids will love making and frosting with you.
The green frosting is also fun for them to make.
do these cookies freeze well?
I have a strange obsession with frozen cookies. I usually don’t have any leftover to freeze, because I love eating cookies as soon as they come out of the oven (I even take the risk of getting a burnt tongue from the melted chocolate), but frozen cookies are so yummy.
These cookies freeze extremely well. You can eat them slightly frozen, or freeze them or up to a month.
When freezing them, we recommend either wrapping them in a layer of saran wrap, then a layer of aluminum foil, or placing them in an airtight container.
To thaw them, you can microwave them, but I usually take mine out of the freezer, 24 hours before serving them, and they are perfect and chewy.
could i use butter instead of shortening?
For this recipe, we used vegetable shortening, however you could also use butter flavored shortening, or even butter.
You will want to be sure your butter is softened (meaning not melted or slightly melted, just at room temperature) for the best results. You may also need another extra Tablespoon of butter, if you choose to use butter over shortening.
