Cadbury Mini Egg Blondies Recipe

These Cadbury Mini Egg Blondies are sure to be a huge hit at any family function or gathering. They are so easy to make and come together in just minutes. They are so yummy, and if you are a Cadbury Egg fan, these are calling your name.

I can eat Cadbury Mini Eggs by the bagful.  Literally, I can buy some in the morning and they are gone before my husband gets home from work.
It is a terrible addiction. I found it takes me a little longer to go through a whole bag when they are baked into a dessert.
Trust me when I say they are just as good, if not better, when eaten this way. I was skeptical at first, because it doesn’t get much better than these bad boys, but it does.
Baking them into a blondie was the best thing I’ve ever done. If you

TIPS FOR MAKING CADBURY MINI EGG BLONDIES:

  • STEP 1: To make sure the dough comes out thick and creamy, add the ingredients in order, as directed in the instructions. Following the order, will lead to thick and perfect dough.

  • STEP 2: Add in the Mini Cadbury Eggs, but be careful when folding them in, so you don’t chip or damage the shell. I used a rubber spatula to fold them in.  You could also use a wide, hard-wired spatula, to combine them.

  • STEP 3: Press the batter into the pan. I sprayed my pan with nonstick cooking spray to avoid sticking. I also used a sprayed (with non-stick cooking spray) rubber spatula, to press the dough in.
  • I also added a few white chocolate chips, because I had some left over and thought they would look so cute in these blondies.

  • STEP 4: Remove from oven and let them cool completely before cutting into them. They are pretty soft (especially the middle ones) when you first slice them, so I recommend waiting 30-40 minutes before digging in.

  • STEP 5: Serve and enjoy! I don’t blame you if you eat the entire pan.

what could i use in place of the cadbury eggs?

I don’t really like to answer this question, because I don’t get why you would ever need to replace Cadbury eggs? Am I the only one this passionate about them? They are just so yummy, and I can’t get enough of them, so I don’t see why you’d ever replace them.

However, if you do need to replace them (only from an allergy I’m guessing, not because you don’t like them), here are a few ideas:

  • Milk or Semi Sweet Chocolate Chips (you may want to check out our Chocolate Chip Blondies)
  • M & M’s (these work best because like the Cadbury eggs, they stay mostly in their shell and don’t bleed).
  • Butterscotch Chips
  • White Chocolate Chips
  • Heath or Toffee Bits
  • Caramel Bits
  • Candybar Bits (we recommend Snickers, Milky Ways, Reese’s, Junior Mints, Andes Mints, etc.)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter (melted)
  • 1 cup brown sugar (packed)
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 2 cups milk chocolate mini Cadbury eggs

Instructions

  1. In a medium sizes mixing bowl sift flour, baking soda and salt together.
  2. Add melted butter to the bowl of your electric mixer.
  3. Cream together with sugars.
  4. Add in vanilla and eggs mix until creamy.
  5. Slowly add in flour mixture until it is incorporated.
  6. Fold in Mini Eggs.
  7. Spread batter into a greased 8x8 or 9x9 baking dish.
  8. Bake at 325 for about 40 minutes or until a tooth pick is inserted in the center and comes out clean.
  9. Let the bars cool for 30 minutes before slicing.

  1. The pan in your photos doesn't look square. I baked mine in an 8x8 dish, as per the instructions and they're at least 2 inches thick. (I'm sure they'll still be delicious.) For future reference, what size pan did you use for the blondies pictured?

    help! I have made these many times and they are delicious. There is only one problem, the middle always sinks on me. I thought that I might have over mixed the better, but even when I spoon mix it I still have the same problem.
