Butterscotch Toffee Cookies

These are the yummiest cookies and they are so easy to make!  You won’t believe this, but they only have 5 ingredients!  These cookies are soft and chewy, loaded with butterscotch and chocolate toffee bits!

You will want to try our delicious sugar cookies. We use our favorite sugar cookie recipe in these cute Santa Sugar Cookies.

Butterscotch Toffee Cookies

These soft and chewy cookies are bursting with butterscotch and chocolate toffee, and only 5 ingredients.

  • 2 large eggs
  • 1/2 cup canola oil
  • 1 (15.25 ounce) package butter pecan cake mix (I used Betty Crocker)
  • 1 (11.5 ounce) package butterscotch chips
  • 8 ounces Heath Chocolate Covered Toffee Bits


  1. Heat oven to 350 degrees F.
  2. In a large bowl beat the eggs and oil until well blended. Gradually add in cake mix and mix well.
  3. Fold in butterscotch chips and toffee bits until well blended.
  4. Roll into 1 to 1 1/2 inch balls and place on greased baking sheet.
  5. Bake 10-12 minutes or until golden brown.
  6. Cool for a minute on cookie sheet, then remove to a wire rack to finish cooling.

    This came up on my Pinterest feed and I thought I would try them out. I realize this is not an original recipe, so any fault does not lie with the Six Sisters. I found the batter very wet and "gummy" - - I added a bit of flour just so I could get the cookies onto a cookie sheet. There was no rolling them into balls as they were far too wet for that so I just dropped them by spoonfuls. They are very sweet... but one look at the ingredient list will tell you that much! LOL. They were chewy and tasty; I may make them again, just not really sure. DO NOT OVER BAKE! Better to pull them out while still pale than risk over baking them. They will fall and set up nicely.
