My family loves banana bread. We often have brown ripe bananas at our house, so we love trying new flavors of banana bread. With the added butterscotch chips, we have a new favorite.
Am I the only one that buys bananas each week at the grocery store, thinking I’m going to eat them. Every week I buy a bundle, and there they sit.
They have a small window of ripeness when they are perfect to eat, and if I miss the window they don’t get eaten.
Luckily this bread has been saving my life, and I don’t even want to eat the bananas when they are perfectly yellow, because I want to save my bananas to make this Butterscotch bread.
It’s quick, simple, moist, and the perfect banana bread recipe. You’ll love the butterscotch and banana flavor.
We love making this bread in 3 mini loaf pans. They are great as neighbor gifts and you still have a loaf for your family!
what is the best way to store Butterscotch banana bread?
Our whole family loves this butterscotch banana bread so we rarely have any leftovers. However, if you do have some leftover, the best way to store it is putting the loaves in the fridge.
We recommend placing them in an air tight storage container, and putting them in the fridge.
If you aren’t going to eat them for more than a week, we recommend freezing them. Again the best way to freeze them is placing them in a freezer bag or an airtight storage container and putting them in the freezer.
They will last nicely in the freezer for about 4 weeks, and in the fridge, about 3-5 days.
To thaw them, just remove from the freezer and thaw on the counter. You could also place them in the fridge overnight for a slow thaw.

This bread is delicious with the butterscotch chips. However if you don’t like butterscotch, here are a few add ins we highly recommend:
- M&M’s
- Peanut Butter Chips
- Chocolate Chips
- Walnuts or pecans
- Cream cheese swirls
- Nutella
- Chopped Snickers Bars
Let’s make butterscotch banana bread
Step 1: Pre heat oven to 350 degrees F.
Step 2: Mash bananas in a large bowl using a potato masher or fork.
Step 3: Add in egg, vegetable oil, and sugar. Then stir in cinnamon, nutmeg, salt, baking soda, and baking powder.
Step 4: Stir in flour and mix just until combined.
Step 5: Gently fold in the butterscotch chips.
Step 6: Pour batter into a greased 9 x 5 inch loaf pan or 3 mini loaf pans. Sprinkle a few butterscotch chips on top of batter in loaf pans.
Step 7: Bake for 55 minutes in full size loaf pan or until toothpick inserted comes out clean. If you cook them in 3 mini loaf pans, bake for about 40 minutes. Remove from pans and let cool on wire baking racks.
