Buffalo Chicken Celery Sticks

A quick healthy lunch with a serving of vegetables and packed with protein! Buffalo Chicken Celery Sticks are a perfect low carb option!

I’m pregnant with my first baby and I can tell you, the cravings are REAL. I guess I just thought people were being dramatic when they said they were craving certain foods, but now I know the truth!

This whole pregnancy, even in the beginning when I could barely stomach anything, the taste of buffalo sauce or buffalo chicken, was always appealing.

I knew I needed to cut out some carbs, but I was craving our Buffalo Chicken Salad Sandwiches like crazy! I decided to serve the chicken salad on celery sticks and the flavor combination was delicious! This will be a meal I’ll be eating long after the baby comes.

How to Make buffalo Chicken Salad

Buffalo Chicken Salad is so easy to make, just throw together these ingredients in a mixing bowl:

  • 2 cups shredded chicken
  • 1/2 cup ranch dressing
  • 1/4 cup hot buffalo wing sauce (I like Frank’s RedHot sauce)
  • 4 oz cream cheese, softened
  • 2 celery stalks, finely diced
  • 1/4 cup onion, finely diced
  • 1/4 teaspoon garlic powder
  • A pinch of salt and pepper
  • 3-4 large stalks of celery

We love serving ours on celery sticks, but you could put this on rolls too for a quick lunch or meal. You could also cut your celery sticks a little smaller and serve these as a delicious appetizer or snack.

We suggest using cream cheese at room temperature for this recipe. It will help you avoid any clumps of cream cheese in your salad. You could also whip your cream cheese, buffalo, and ranch together for a more creamy salad.

ROTISSERIE CHICKEN SHORTCUT

In a pinch to throw this together? Save yourself tons of time by using a rotisserie chicken instead of cooking and chopping your own!

Most grocery store delis will sell freshly packaged rotisserie chicken pulled off the bone.

If you’re local deli does not sell pulled rotisserie chicken, you can also buy a whole chicken and freeze what you don’t use for another time.

Buffalo Chicken Celery Sticks

Ingredients

  • 2 cups shredded chicken
  • 1/2 cup ranch dressing
  • 1/4 cup hot buffalo wing sauce (I like Frank's RedHot sauce)
  • 4 oz cream cheese, softened
  • 2 celery stalks, finely diced
  • 1/4 cup onion, finely diced
  • 1/4 teaspoon garlic powder
  • salt and pepper to taste
  • 3-4 large stalks of celery

Instructions

  1. In a large bowl, mix together chicken, ranch dressing, buffalo sauce, cream cheese, celery, onion and garlic powder. Add salt and pepper as needed.
  2. Wash and dry your celery, and chop into 4-5 inch pieces.
  3. Fill your celery stalks with buffalo chicken mixture and serve.
