Berries and Cream


We are always looking for ways to freshen things up – especially as it starts to get warmer outside. I love spring, and everything associated with it! You can smell the fresh cut grass, feel the sun on your skin, and smell the dew in the morning. When the it starts getting to be 60 or 70 degrees outside, I start changing things up a bit. I start opening up my windows to let the fresh air in, and turn on the fans to get the musty smell of a 7-month winter out of our house (in Logan, Utah – it really is 7 months long!). I start changing out all my Scentsy candle melts from from warmer, sugar/candy smells to light, flowery ones. I even change up my soap scents – I put away the warm vanilla sugar, and pull out the fresh citrus (my new favorite is Wild Basil and Lime from Softsoap’s Decor Collection. It looks good and smells amazing!).

One other switch I always make is with my desserts. Out go the heavy, gain-weight-just-thinking-about-it desserts, and in with fluffy, light fruity ones. This recipe for berries and cream is exactly the kind of treat I reach for in warm weather. The tartness of the lime juice mixed with the fresh berries (and a little bit of sugar), topped with the vanilla cream is perfection – especially on a hot summer day. And it is one dessert recipe you won’t feel guilty devouring!

Berries and Cream:
4 cups of berries (I used strawberries, raspberries, and blackberries – you can use whatever you’d like)
2 tablespoons of sugar
The juice of two limes (about 4 tablespoons)
1 small package of instant vanilla pudding
1 cup of whipping cream
1/2 cup of milk

Mix together the berries, sugar, and lime juice in a large bowl. In a separate bowl, whisk together pudding, cream, and milk for two minutes. Let it refrigerate for about 5 minutes until it is set up. Top the berries with pudding mixture – with as much or as little as you’d like!
